Fruit Breakfast Bars

I found this great recipe in my favorite magazine! Oxygen!

For the fruit in this recipe you can use your fruit of choice. Apples taste great, but feel free to get creative!

Ingredients:

1/2 cup of dried fruit of choice, diced
1/3 cup of honey 1/4 cup of dried cranberries or raisins (or a mix!)
1 Tbsp brown sugar Splenda
1/3 cup Natural Peanut Butter
1/2 tsp cinnamon
1/2 cup chopped walnuts or pecans
1/4 cup roasted sunflower seeds
1/2 cup rolled oats
1 tbsp butter
2 cups bran flakes

Instructions:
In a medium saucepan, combine apples, honey, raisins and brown sugar. Stir until boiling, then reduce heat. Cook uncovered for one minute, stirring constantly. Remove from heat and stir in peanut butter until melted. Blend in applesauce, butter and cinnamon. Stir in oats, nuts, wheat germ, and sunflower seeds until well combined. Add bran flakes and stir. Press the mixture very firmly (or bars will crumble) and evenly into an eight-inch square pan, two inches deep. Chill to set, then cut into eighths.

Makes 8 bars

Nutrients Per Bar:
275 Calories, 8 g fat (1 g saturated fat), 38 g carbohydrates, 9 g protein, 8 g fiber.
